Oil Free Balsamic Dressing Recipe

I adapted this from other recipes – turmeric is one of the most anti-cancer, anti-inflammatory, anti-oxidant foods and the black pepper increases it’s levels in the body eight-fold. The mustard contains myrosinase which “activates” a potent anti-cancer compound (sulforaphane) in cruciferous vegetables such as broccoli. The oil is optional but helps with turmeric absorption.

Ingredients

  • 2 Tbsp balsamic vinegar
  • 1 Tbsp red wine vinegar
  • 1 Tbsp Dijon mustard
  • 1 tsp maple syrup
  • 1 garlic clove, minced (optional)
  • 1/2 tsp salt (optional)
  • 1/4 tsp black pepper
  • 2 Tbsp extra virgin olive oil (optional)
  • 2 Tbsp plant-based milk
  • 1 1/2 tsp turmeric

Directions

  1. Mix all ingredients except oil together.
  2. Add oil to mixture and mix well (I use a blender; you could use a whisk or latte frother).
