What About Rice ?

Unfortunately, it gets complicated for people who like rice.  This is because the rice plant naturally takes up and concentrates arsenic which is toxic to humans.

Here are some brief (~5 min each) videos to explain this:

  1. How Risky is the Arsenic in Rice ?
  2. How much Arsenic in Rice is too much ?
  3. Do the Pros of Brown Rice outweigh the Cons of Arsenic ?

The arsenic is in particularly high concentrations in the husk (ie worse with brown rice).  Additionally, white rice has fairly high glycemic index (ie it raises your blood sugar). Here’s a practical approach: 1) Use an alternative (quinoa is a whole grain and a great option), 2) If you decide to consume rice consider: a) “Diluting” it with quinoa or lentils, b) Cooking it in excess water to “leech” out as much arsenic as possible (see here for details).
